#2 Mint Chocolate Brownie Cookies

Recipe & Instructions

2/3 cup vegetable shortening
1 1/2 cup light brown sugar
1 Tbl water
1 Tbl vanilla
2 eggs
1 1/2 cup all purpose flour
1/3 cup cocoa powder
1/2 tsp salt
1/4 tsp baking soda
1/2-3/4 cup mint/chocolate chips

1. Preheat oven to 375
2. Combine Shortening, brown sugar, water & vanilla
3. Add eggs
4. Mix flour, cocoa, salt, baking soda in a bowl
5. Combine wet and dry ingredients
6. Place by tablespoons on ungreased cookie sheet
7. Bake 7-9 minutes

I personally blended all the ingredients by hand, which was not easy. I made sure the shortening was room temp, and then stirred it all together.
I put the cookies on a silicone mat, and on the top rack of the oven for 9 minutes.
They came out perfectly, but are a softer cookie, melt in your mouth cookie, not crunchy.

The reviews have been positive, my husband was eating them faster than I could get them off the cookie sheet.
